Japanese chisels or nomi as they are traditionally called. Japanese chisels are laminated with hardened steel at the face edge, and softer metal at the back to absorb shock and support the harder face.
The chisels are hollow ground on their back to reduce the surface area to be flattened. For a truely sharp edge it is essential that the back is perfectly flat.
